Ingredients

  • 1 pound ground beef (preferably 90% lean)
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 1 medium green bell pepper, diced
  • 3 cloves garlic, minced
  • 28 ounces crushed tomatoes, no salt added
  • 15 ounces red kidney beans, low sodium, drained and rinsed
  • 15 ounces black beans, low sodium, drained and rinsed
  • 2 tablespoons tomato paste, no salt added
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon paprika
  • 0.5 teaspoon ground black pepper
  • 1 teaspoon dried oregano
  • 1 whole bay leaf
  • 1 cup water or low sodium beef broth

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Add the ground beef and cook until browned, about 5-7 minutes, breaking it apart with a spoon as it cooks.

Step 3

Transfer the beef to a plate, leaving behind the fat and juices in the pot.

Step 4

In the same pot, add the diced onion, diced bell pepper, and minced garlic. Sauté until the onion is translucent, about 5 minutes.

Return the browned beef to the pot along with the crushed tomatoes, kidney beans, black beans, and tomato paste.

Step 6

Stir in the chili powder, cumin, paprika, black pepper, oregano, and bay leaf.
