  • 2 tablespoons Tomato paste
  • 0.25 cup Brandy
  • 4 cups Low-sodium chicken broth
  • 1 Bay leaf
  • 2 Thyme sprigs
  • 1 cup Heavy cream
  • 1 tablespoon Cornstarch
  • 1 teaspoon Paprika
  • 0 Pepper, to taste
  • 2 tablespoons Chives, chopped (for garnish)

Directions

Step 1

Begin by cooking the lobsters. Bring a large pot of water to a boil and cook the lobsters for about 8 minutes. Remove and cool slightly before cracking open to remove the meat. Set the meat aside, and reserve the shells for the stock.

Step 2

In a large pot or Dutch oven, melt the unsalted butter with olive oil over medium heat. Add the chopped onion, carrots, celery, and garlic. Sauté until softened, about 5 minutes.

Step 3

Stir in the tomato paste and cook for another 2 minutes. Add the lobster shells to the pot and sauté for an additional 5 minutes to develop flavor.

Pour in the brandy, and let it simmer for 2 minutes to cook off the alcohol. Add the low-sodium chicken broth, bay leaf, and thyme sprigs. Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes.
