Ingredients

  • 4 pieces Medium Russet Potatoes
  • 2 tablespoons Olive Oil
  • 1 teaspoon Black Pepper
  • 2 tablespoons Fresh Chives
  • 1 cup Low Sodium Sour Cream
  • 2 tablespoons Unsalted Butter

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash the Russet potatoes thoroughly under running water to remove dirt. Pat them dry with a clean kitchen towel.

Step 3

Using a fork, poke several holes all over each potato. This ensures steam escapes while baking.

Step 4

Rub each potato evenly with olive oil, then sprinkle with black pepper to taste. Place the potatoes on a baking tray.

Step 5

Bake the potatoes in the preheated oven for about 60 minutes, or until crisp on the outside and tender on the inside when pierced with a fork.

Step 6

While the potatoes are baking, finely chop the fresh chives and set them aside.

Step 7

Once the potatoes are baked, remove them from the oven and let them cool for about 5 minutes.

Step 8

Cut a deep cross on top of each potato and gently squeeze the ends to open up the potato slightly.

Step 9

Fluff the insides of the potatoes with a fork, then add half a tablespoon of unsalted butter to each potato.

Step 10

Top each potato with 1/4 cup of low sodium sour cream and a sprinkle of chopped chives.

Step 11

Serve immediately and enjoy your delicious homemade low sodium jacket potatoes.
