Ingredients

  • 2 slices low sodium whole grain bread
  • 1 tablespoon unsalted butter
  • 1 large egg
  • 2 slices low sodium deli ham
  • 1 slice low sodium Swiss cheese
  • 0.25 cup fresh spinach leaves
  • 1 teaspoon olive oil
  • 0.25 teaspoon black pepper

Directions

Step 1

Preheat a non-stick skillet over medium heat and add olive oil.

Step 2

Crack the egg into the skillet, sprinkle with black pepper, and cook until the whites are set, about 2-3 minutes. Flip the egg carefully and cook an additional minute until the yolk is slightly firm, or longer if a firmer yolk is desired.

Remove the egg from the skillet and set aside.

In the same skillet, add the low sodium deli ham slices and cook for 1 minute on each side until they are warmed through.

Remove the ham from the skillet and set aside.
