Ingredients

  • 200 grams Gruyère cheese
  • 200 grams Emmental cheese
  • 2 tablespoons Cornstarch
  • 240 milliliters Dry white wine
  • 1 clove Garlic
  • 1 tablespoon Lemon juice
  • 1 pinch Nutmeg
  • 1 pinch White pepper
  • 0 as needed Bread cubes (for serving)
  • 0 as needed Assorted vegetables, such as broccoli and bell peppers (for serving)
  • 0 as needed Apple slices (for serving)

Directions

Step 1

Start by preparing the cheese. Grate the Gruyère and Emmental cheese finely and toss them together with the cornstarch in a medium-sized bowl.

Step 2

Rub the inside of a fondue pot or medium-sized saucepan with the garlic clove, ensuring the garlic oils coat the surface. Discard the garlic clove afterward.

Step 3

Pour the white wine into the pot and bring it to a gentle simmer over medium heat. Be careful not to boil the wine, as this can diminish its flavor.

Step 4

Slowly add the cheese mixture to the pot, one handful at a time, stirring constantly with a wooden spoon or whisk. Make sure each addition is completely melted before adding more cheese.

Step 5

Once all the cheese has been incorporated and the mixture is smooth, add the lemon juice. Stir well to combine.

Step 6

Season the fondue with a pinch of nutmeg and white pepper, adjusting to your taste if necessary.

Step 7

Once ready, transfer the fondue pot to its stand over a gentle heat source to keep warm during serving.

Step 8

Serve the cheese fondue immediately with cubed bread, assorted vegetables, and apple slices for dipping.
