Ingredients

  • 1 cup all-purpose flour
  • 1 cup low sodium milk
  • 2 large eggs
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup ricotta cheese, low sodium
  • 4 ounces cream cheese, reduced sodium
  • 1 teaspoon lemon zest
  • 1 egg yolk
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon unsalted butter, for frying

Directions

Step 1

In a mixing bowl, whisk together the flour, low sodium milk, 2 eggs, 2 tablespoons of melted unsalted butter, granulated sugar, and vanilla extract until smooth. The batter should be thin and without lumps.

Step 2

Heat a non-stick pan over medium heat. Lightly grease it with a little unsalted butter.

Pour approximately 1/4 cup of the batter into the hot pan, swirling to coat the bottom evenly. Cook for 1-2 minutes until the edges start to lift and the bottom is lightly golden.
