Ingredients

  • 4 large Russet potatoes
  • 3 tablespoons Olive oil
  • 2 tablespoons Cornstarch
  • 2 cups Water
  • 2 cups Low sodium beef broth
  • 3 tablespoons Unsalted butter
  • 3 tablespoons All-purpose flour
  • 1 teaspoon Fresh thyme
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Garlic powder
  • 2 cups White cheese curds

Directions

Step 1

Preheat the oven to 425°F (220°C).

Step 2

Wash and peel the potatoes. Cut them into 1/4-inch thick fries.

Step 3

Place the potato fries in a large bowl, drizzle with olive oil, and toss to coat evenly.

Step 4

Spread the fries out on a baking sheet in a single layer. Bake in the preheated oven for 35-40 minutes, flipping halfway through, until golden and crispy.

Step 5

While the fries are baking, prepare the gravy. In a small bowl, mix the cornstarch and 1/4 cup of water to create a slurry.

Step 6

Melt the unsalted butter in a medium saucepan over medium heat. Add the flour and whisk continuously for about 2 minutes to form a roux.

Step 7

Gradually add the low sodium beef broth while whisking constantly to prevent lumps.

Step 8

Stir in the thyme, ground black pepper, and garlic powder, and bring the mixture to a simmer.

Step 9

Add the cornstarch slurry to the saucepan and continue to simmer the gravy for 5-7 minutes, stirring occasionally, until it thickens to your desired consistency.

Step 10

Once the fries are done, remove them from the oven.

Step 11

To assemble the poutine, layer half of the fries on a serving platter, sprinkle half of the white cheese curds over the fries, and pour half of the hot gravy over the top.

Step 12

Repeat with the remaining fries, cheese curds, and gravy.

Step 13

Serve hot and enjoy your delicious low sodium Canadian poutine!
