Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 0.5 cup unsalted butter, chilled
  • 1 cup milk
  • 0.5 teaspoon ground black pepper
  • 2 tablespoons unsalted butter for gravy
  • 3 tablespoons all-purpose flour for gravy
  • 2.5 cups milk for gravy
  • 0.5 teaspoon ground black pepper for gravy
  • 0.25 teaspoon ground sage
  • 0.5 pound fresh ground pork
  • 0.5 teaspoon onion powder
  • 0.25 teaspoon garlic powder

Directions

Step 1

Preheat your oven to 450°F (232°C).

Step 2

In a large mixing bowl, combine 2 cups of all-purpose flour and 1 tablespoon of baking powder.

Step 3

Cut 0.5 cup of chilled unsalted butter into small cubes and incorporate into the flour mixture using your fingers or a pastry cutter until it resembles coarse crumbs.

Step 4

Stir in 1 cup of milk gradually until the dough just comes together. Be cautious not to overmix.

Step 5

Turn the dough out onto a lightly floured surface and gently pat or roll to about 1/2 inch thickness.

Step 6

Using a biscuit cutter, cut out biscuits and place them onto a baking sheet.

Step 7

Bake in the preheated oven for 10-12 minutes or until the tops are golden brown.

Step 8

While the biscuits are baking, heat a skillet over medium heat and add 0.5 pound of fresh ground pork. Cook until browned.

Step 9

Remove the sausage from the skillet, leaving the rendered fat. Add 2 tablespoons unsalted butter to the skillet, melting completely.

Step 10

Stir in 3 tablespoons of all-purpose flour and cook for about 1 minute, stirring constantly until lightly browned.

Step 11

Gradually whisk in 2.5 cups of milk, adding a little at a time until smooth. Continue to cook, stirring constantly, until the gravy begins to thicken.

Step 12

Return the cooked sausage to the gravy and stir in 0.5 teaspoon black pepper, 0.25 teaspoon garlic powder, 0.5 teaspoon onion powder, and 0.25 teaspoon ground sage. Adjust seasoning as needed.

Step 13

Reduce heat to low, maintaining a gentle simmer for 5 minutes until the gravy is thickened. If necessary, thin the gravy with a small amount of milk to reach your desired consistency.

Step 14

Serve the biscuits warm, topped generously with the sausage gravy.
