Ingredients

  • 1 pound lean ground beef
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1 large carrot, finely chopped
  • 1 celery stalk, finely chopped
  • 2 tablespoons tomato paste
  • 1 cup low sodium beef broth
  • 28 ounces no salt added canned diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon black pepper, freshly ground
  • 0.25 teaspoon red pepper flakes
  • 1 bay leaf
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

In a large pot, heat the olive oil over medium heat.

Step 2

Add the chopped onion and sauté for about 5 minutes until translucent.

Step 3

Add the minced garlic, chopped carrot, and celery to the pot, continuing to sauté for another 5 minutes until the vegetables are softened.

Step 4

Increase the heat to medium-high and add the ground beef, breaking it up with a spoon and cooking until browned, about 8 minutes.

Step 5

Stir in the tomato paste and cook for 2 minutes, allowing the flavor to deepen.

Step 6

Pour in the low sodium beef broth, scraping the bottom of the pot to deglaze any stuck bits.

Step 7

Add the no salt added canned diced tomatoes, oregano, basil, thyme, black pepper, red pepper flakes, and bay leaf.

Step 8

Bring the mixture to a simmer, then reduce the heat to low.

Step 9

Cover the pot and let the sauce simmer gently for about 40 minutes, stirring occasionally, allowing the flavors to meld and the sauce to thicken.

Step 10

Remove the bay leaf and adjust the seasoning if necessary with additional pepper or spices to suit your taste.

Step 11

Serve the sauce over your choice of cooked pasta, garnished with chopped fresh parsley.
