Ingredients

  • 1 large (about 24 inches long) Whole wheat baguette
  • 1 pound Beef tenderloin
  • 2 tablespoons Olive oil
  • 1 teaspoon Dried rosemary
  • 1 teaspoon Dried thyme
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Black pepper
  • 0.5 cup Plain Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Lemon juice
  • 1 tablespoon, chopped Fresh parsley
  • 4 leaves, large Romaine lettuce
  • 1 large, sliced Tomato
  • 0.5 thinly sliced Cucumber
  • 0.25 small, thinly sliced Red onion

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

In a small bowl, mix together olive oil, dried rosemary, dried thyme, garlic powder, and black pepper.

Step 3

Rub the seasoning mixture all over the beef tenderloin.

Step 4

Place the beef on a roasting pan and roast in the preheated oven for 20-25 minutes or until an internal temperature of 135°F (57°C) for medium rare is reached.

While the beef is roasting, prepare the dressing by combining the Greek yogurt, Dijon mustard, lemon juice, and chopped parsley in a small bowl. Mix well and set aside.
