Ingredients

  • 4 slices low sodium turkey bacon
  • 2 large eggs
  • 4 slices whole grain bread
  • 2 tablespoons low sodium butter
  • 0.5 teaspoon freshly ground black pepper
  • 1 cup fresh spinach leaves
  • 2 slices low sodium cheese

Directions

Step 1

Heat a non-stick skillet over medium heat. Add the low sodium turkey bacon slices and cook for 4-5 minutes, turning occasionally, until crispy. Remove the bacon and set aside on a paper towel-lined plate to drain any excess fat.

Step 2

In the same skillet, add 1 tablespoon of low sodium butter. Once melted, crack two large eggs into the skillet. Cook the eggs over medium heat until the whites are fully set, but the yolks are still runny, or longer if you prefer fully cooked yolks.
