  • 100 grams Granulated sugar
  • 3 large Egg yolks
  • 1 teaspoon Vanilla extract
  • 200 grams All-purpose flour
  • 300 grams Cornstarch
  • 1 teaspoon Baking powder
  • 1 lime Lime zest
  • 300 grams Dulce de leche
  • 50 grams Powdered sugar
  • 50 grams Shredded unsweetened coconut

Directions

Step 1

Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, cream the unsalted butter and granulated sugar together until light and fluffy.

Step 3

Add the egg yolks one at a time to the butter mixture, beating well after each addition.

Step 4

Mix in the vanilla extract and lime zest until combined.

Step 5

In a separate bowl, sift together the all-purpose flour, cornstarch, and baking powder.

Step 6

Gradually add the dry ingredients to the butter mixture, blending until just combined to form a dough.

Step 7

Dust a clean work surface lightly with flour. Roll out the dough to about 1/4 inch thickness.

Step 8

Use a round cookie cutter, about 2 inches in diameter, to cut out discs and place them on the prepared baking sheet.

Step 9

Bake in the preheated oven for 10-12 minutes, or until the edges just start to turn golden.

Step 10

Remove the cookies from the oven and allow them to cool completely on a wire rack.

Step 11

Once cooled, spread a generous amount of dulce de leche onto the underside of one cookie and sandwich with another.

Step 12

Roll the edges of the sandwich cookies in shredded coconut to finish.

Step 13

Dust the tops with powdered sugar before serving.
