Ingredients

  • 200 grams tapioca flour
  • 250 ml water
  • 3 cloves garlic, finely minced
  • 2 tablespoons spring onion, finely chopped
  • 0.5 teaspoon ground white pepper
  • 1 tablespoon unsalted vegetable broth
  • 250 ml vegetable oil, for frying

Directions

Step 1

In a medium saucepan, bring the water to a boil over medium heat.

Step 2

Once boiling, add minced garlic and unsalted vegetable broth to the pan and stir for about 1 minute to infuse the flavors.

Step 3

Gradually add half of the tapioca flour to the boiling water, stirring continuously to prevent lumps, and cook until the mixture becomes thick and forms a sticky dough.

Step 4

Transfer the sticky dough into a mixing bowl and allow it to cool slightly.

Step 5

Add the remaining tapioca flour, chopped spring onion, and ground white pepper to the bowl with the cooled dough.

Step 6

Using your hands, knead the mixture until all ingredients are well combined, forming a smooth and non-sticky dough.

Step 7

Divide the dough into 8 equal portions and shape each portion into a flat disc, about 1 cm thick.

Step 8

Heat vegetable oil in a frying pan over medium-high heat.

Step 9

Once the oil is hot, carefully add the tapioca discs into the pan, a few at a time, and fry each side until they are golden brown and crispy, about 5 minutes per side.

Step 10

Remove cireng from the oil with a slotted spoon and drain on paper towels to remove excess oil.

Step 11

Serve the low sodium cireng warm with your favorite low sodium dipping sauce.
