Ingredients

  • 2 cups All-purpose flour
  • 1 Large egg
  • 0.5 cup Water
  • 1 pound Lean ground beef
  • 1 medium Onion, finely chopped
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Coriander, ground
  • 0.5 teaspoon Ground cumin
  • 2 tablespoons Parsley, chopped
  • 6 cups Water
  • 1 medium Carrot, sliced
  • 1 Bay leaf
  • 2 cloves Garlic, minced

Directions

Step 1

In a large bowl, combine 2 cups of all-purpose flour and 1 large egg. Gradually add 0.5 cup of water while mixing until a dough forms.

Step 2

Knead the dough on a floured surface for 6-8 minutes until smooth and elastic. Cover the dough and let it rest for 30 minutes.

Step 3

For the filling, mix 1 pound of lean ground beef, 1 finely chopped medium onion, 0.5 teaspoon of black pepper, 0.5 teaspoon of ground coriander, 0.5 teaspoon of ground cumin, and 2 tablespoons of chopped parsley in a bowl.

Step 4

Roll out the dough on a lightly floured surface to about 1/8-inch thick. Cut into 2-inch squares.

Step 5

Place a small teaspoon of the beef filling in the center of each square.

Step 6

Fold the dough over the filling diagonally to form a triangle and seal the edges by pressing firmly.

Step 7

In a large pot, bring 6 cups of water to a boil. Add 1 sliced medium carrot, 1 bay leaf, and 2 minced garlic cloves to the water.

Step 8

Gently drop the chuchvara into the boiling water and cook for 10-12 minutes, until the dumplings float to the top and the filling is cooked through.

Step 9

Remove the chuchvara with a slotted spoon and serve warm, optionally garnished with additional parsley.
