Ingredients

  • 2 cups All-purpose flour
  • 0.5 cup Unsweetened cocoa powder
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.75 cup Granulated sugar
  • 2 pieces Large eggs
  • 1 teaspoon Vanilla extract
  • 0.5 cup Unsalted butter
  • 1 cup Low-fat milk
  • 0.75 cup Dark chocolate chips

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.

Step 2

In a large mixing bowl, sift together the all-purpose flour, unsweetened cocoa powder, baking powder, and baking soda. Stir in the granulated sugar.

Step 3

In another bowl, beat the eggs with vanilla extract until combined.

Step 4

In a small saucepan, melt the unsalted butter over low heat. Allow it to cool slightly, then add it to the egg mixture along with the low-fat milk and mix well.

Step 5

Create a well in the center of the dry ingredients. Pour the wet mixture into the well and gently fold together until just combined. Be careful not to overmix; the batter should be slightly lumpy.

Step 6

Fold in the dark chocolate chips until they are evenly distributed throughout the batter.

Step 7

Spoon the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.

Step 8

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 9

Remove the muffin tin from the oven and let the muffins cool in the tin for about 5 minutes, then transfer them to a wire rack to cool completely.

Step 10

Enjoy these delightful low sodium chocolate muffins with your favorite beverage.
