  • 1 pound boneless, skinless chicken breasts

  • 3 cloves garlic, minced
  • 8 cups unsalted chicken stock
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 cup orzo pasta
  • 2 tablespoons lemon juice
  • 0.25 cup fresh parsley, chopped
  • 0.25 teaspoon black pepper

Directions

Step 1

Begin by heating 1 tablespoon of olive oil in a large pot over medium-high heat.

Step 2

Add the chicken breasts and cook for about 5 minutes on each side until browned. Remove chicken from the pot and set aside.

In the same pot, add another tablespoon of olive oil. Sauté the diced onion, sliced carrots, and sliced celery for about 5 minutes until the vegetables are softened.

Add the minced garlic and cook for an additional minute until fragrant.

Pour in the unsalted chicken stock. Add the dried oregano, dried thyme, and bay leaf to the pot.
