  • 2 tablespoons Lime juice
  • 2 tablespoons Olive oil
  • 12 small Corn tortillas
  • 0.25 cup Fresh cilantro, chopped
  • 1 medium Fresh jalapeno, finely chopped
  • 0.5 cup Low sodium cheese, shredded
  • 1 medium Avocado, sliced (for serving)
  • 0.5 cup Low sodium salsa (for serving)

Directions

Step 1

Preheat your oven to 400°F (200°C) and lightly grease a baking sheet.

Step 2

In a large pot, add the chicken breasts and cover with water. Bring to a boil over medium-high heat, reduce the heat to low, and simmer for about 20 minutes or until the chicken is fully cooked.
