Ingredients

  • 500 grams cherry tomatoes
  • 1 medium cucumber
  • 1 small red onion
  • 10 grams fresh basil leaves
  • 10 grams fresh parsley
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons lemon juice
  • 0.5 teaspoon freshly ground black pepper
  • 1 small garlic clove

Directions

Step 1

Wash and dry the cherry tomatoes, then cut them in half and place them in a large mixing bowl.

Step 2

Peel the cucumber, slice it in half lengthwise, scoop out any seeds, and then slice it into thin half-moons. Add the cucumber to the bowl with the tomatoes.

Step 3

Peel and thinly slice the red onion, then add it to the bowl.

Step 4

Finely chop the fresh basil leaves and parsley, then add them to the salad.

Step 5

For the dressing, peel and mince the garlic clove, then whisk together the minced garlic, extra-virgin olive oil, lemon juice, and freshly ground black pepper in a small bowl.

Step 6

Pour the dressing over the salad ingredients and gently toss to combine all the flavors.

Step 7

Let the salad rest for about 5 minutes at room temperature to allow the flavors to meld.

Step 8

Serve the salad immediately, or chill it in the refrigerator for a refreshing cold option.
