Ingredients

  • 2 cups cherry tomatoes
  • 8 ounces fresh mozzarella balls (bocconcini or ciliegine)
  • 0.25 cup fresh basil leaves
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • 0.5 teaspoon cracked black pepper
  • 0.25 teaspoon garlic powder

Directions

Step 1

Wash the cherry tomatoes under cold running water and pat them dry with a paper towel. Cut each tomato in half and place them into a large mixing bowl.

Step 2

Drain the fresh mozzarella balls and pat them dry with paper towels. If they are larger than bite-sized, cut them into halves or quarters to match the size of the cherry tomato halves. Add the mozzarella to the mixing bowl with the tomatoes.

Step 3

Chop the fresh basil leaves roughly. Add the chopped basil to the mixing bowl.

Step 4

In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, cracked black pepper, and garlic powder until well combined.

Step 5

Pour the dressing over the salad ingredients in the mixing bowl, and gently toss everything together until the tomatoes and mozzarella are evenly coated with the dressing.

Step 6

Let the salad sit for about 5 minutes at room temperature to allow the flavors to meld, then serve immediately.
