Ingredients

  • 1 pound lean ground beef
  • 0.5 cup low sodium bread crumbs
  • 0.5 cup low fat mozzarella cheese, shredded
  • 1 large egg
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, combine the ground beef, bread crumbs, mozzarella cheese, egg, garlic powder, onion powder, oregano, black pepper, and chopped parsley. Mix until all the ingredients are well combined.

Step 3

Using your hands, form the mixture into meatballs about 1 1/2 inches in diameter. You should make around 16 to 20 meatballs, depending on size.

Step 4

Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the meatballs in batches, avoid overcrowding. Sear each meatball, turning occasionally, until browned on all sides, approximately 3-4 minutes per batch.

Step 5

Once all the meatballs are seared, transfer them to the prepared baking sheet.

Step 6

Place the meatballs in the preheated oven and bake for about 10-12 minutes or until they are cooked through.

Step 7

Remove from the oven and let them rest for a few minutes before serving.

Step 8

Serve the low sodium cheesy meatballs warm, garnished with additional parsley if desired. Enjoy as a main dish or a hearty appetizer.
