Ingredients

  • 4 large eggs
  • 100 grams low sodium deli ham
  • 60 grams low sodium shredded cheddar cheese
  • 1 tablespoon unsalted butter
  • 2 tablespoons milk or cream
  • 2 tablespoons fresh chives
  • 0.25 teaspoon black pepper

Directions

Step 1

In a medium bowl, crack the eggs and whisk them together with the milk or cream until well blended. Set aside.

Step 2

Chop the low sodium deli ham into small, bite-sized pieces.

Step 3

Finely chop the fresh chives and set aside for garnish.

Step 4

Heat a non-stick skillet over medium heat and add the unsalted butter. Allow it to melt and coat the bottom of the pan evenly.

Step 5

Once the butter is melted, add the chopped ham to the pan. Cook for 2-3 minutes or until the ham is lightly heated through.

Step 6

Pour the whisked eggs into the skillet, then immediately reduce the heat to low. Stir gently and continuously using a spatula, scraping the bottom of the skillet to form soft curds.

Step 7

Just before the eggs are fully set, sprinkle the shredded cheddar cheese over the eggs evenly.

Step 8

Continue to cook, stirring gently, until the eggs are softly set and creamy, and the cheese is melted.

Step 9

Season with black pepper and remove from heat.

Step 10

Garnish with chopped chives and serve immediately.
