Ingredients

  • 4 pieces whole wheat tortillas
  • 1 cup shredded low-sodium cheddar cheese
  • 1 medium red bell pepper
  • 2 stalks green onion
  • 1 cup baby spinach leaves
  • 1 tablespoon non-sodium taco seasoning
  • 1 tablespoon olive oil

Directions

Step 1

Deseed and finely chop the red bell pepper. Slice the green onions thinly. Set aside.

Step 2

In a large non-stick pan, heat the olive oil over medium heat.

Step 3

Add the red bell pepper and sauté for about 3 minutes or until they start to soften.

Step 4

Stir in the green onions and baby spinach leaves, and cook for another 2 minutes, or until the spinach wilts.

Step 5

Sprinkle the non-sodium taco seasoning over the vegetables and mix well. Remove the vegetables from the pan and set them aside in a bowl.

Step 6

Place one tortilla in the same pan over medium heat. Scatter 1/4 cup of shredded low-sodium cheddar cheese evenly on one half of the tortilla.

Add a quarter of the vegetable mixture on top of the cheese.

Fold the other half of the tortilla over the cheese and vegetables to form a semi-circle.
