Ingredients

  • 3 cups All-purpose flour
  • 2 teaspoons Instant yeast
  • 1 tablespoon Sugar
  • 0.5 cup Olive oil
  • 0.75 cup Warm water
  • 1 cup Low sodium feta cheese
  • 0.25 cup Sesame seeds
  • 1 large Egg
  • 2 tablespoons Milk
  • 1 teaspoon Baking powder
  • 1 teaspoon Dried thyme

Directions

Step 1

In a large mixing bowl, combine the flour, instant yeast, sugar, and baking powder.

Step 2

Make a well in the center of the dry ingredients and add the olive oil and warm water.

Step 3

Mix the ingredients together until a soft dough forms. Knead the dough for about 8-10 minutes until it becomes smooth and elastic.

Step 4

Cover the bowl with a clean kitchen towel and let the dough rise in a warm place for about 30 minutes, or until it has doubled in size.

Step 5

Preheat your oven to 375°F (190°C).

Step 6

In a small bowl, crumble the low sodium feta cheese and mix it with the dried thyme.

Step 7

Divide the risen dough into 8 equal portions and shape each portion into a ball.

Step 8

Flatten each dough ball into a disk approximately 1/2 inch thick and place about 1 tablespoon of the feta cheese mixture in the center.

Step 9

Fold the edges of the dough over the cheese filling to enclose it, then gently pat it back into a disk shape.

Step 10

In a small bowl, whisk together the egg and milk for the egg wash.

Step 11

Place the filled dough disks on a baking sheet lined with parchment paper.

Step 12

Brush the tops with the egg wash and sprinkle generously with sesame seeds.

Step 13

Bake in the preheated oven for 18-20 minutes or until the kaak are golden brown.

Step 14

Remove them from the oven and let them cool on a wire rack for a few minutes before serving.
