Ingredients

  • 6 large Eggs
  • 0.5 cup Low sodium cottage cheese

  • 1 cup Fresh spinach, chopped
  • 3 stalks Green onions, thinly sliced
  • 1 tablespoon Olive oil
  • 0.25 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Onion powder

Directions

Step 1

Preheat the oven to 350°F (175°C).

In a medium-sized mixing bowl, whisk together the eggs until yolks and whites are completely mixed and slightly frothy.

Add the low sodium cottage cheese and shredded low sodium cheddar cheese to the eggs, and stir to combine evenly.
