Ingredients

  • 2 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 1 cup No-sodium-added cottage cheese
  • 1 cup Grated low-sodium mozzarella cheese
  • 4 tablespoons Unsalted butter
  • 1 large Egg
  • 1 cup Milk
  • 2 tablespoons Fresh chives, chopped
  • 1 teaspoon Garlic powder
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a donut pan with unsalted butter or oil spray.

Step 2

In a large bowl, whisk together the flour, baking powder, garlic powder, and black pepper until well combined.

Step 3

In another bowl, beat the egg and mix in the no-sodium-added cottage cheese, milk, and melted unsalted butter. Stir until the mixture is smooth.

Step 4

Gradually fold the wet mixture into the dry ingredients, stirring until just combined and smooth to avoid overmixing.

Step 5

Add the grated low-sodium mozzarella cheese and chopped chives to the batter, until they are evenly distributed.

Step 6

Spoon the batter into the prepared donut pan, filling each cavity about 3/4 full.

Step 7

Bake in the preheated oven for 12-15 minutes, or until the donuts are golden brown and a toothpick inserted into one comes out clean.

Step 8

Remove the donuts from the oven and let them cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature. Store leftovers in an airtight container in the refrigerator for up to 3 days.
