Ingredients

  • 1 cup All-purpose flour
  • 1 cup Milk
  • 1 Large egg
  • 2 tablespoons Unsalted butter, melted

  • 1 cup Low sodium cottage cheese
  • 0.5 cup Ricotta cheese
  • 1 Egg yolk
  • 2 tablespoons Sugar
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Unsalted butter, for cooking

Directions

Step 1

In a mixing bowl, whisk together the flour, milk, egg, melted butter, and water until smooth. This is the batter for the crepes. Set aside to rest for about 10 minutes.

Step 2

For the filling, in a separate bowl, combine the low sodium cottage cheese, ricotta cheese, egg yolk, sugar, and vanilla extract. Mix until smooth and well-integrated.

Step 3

Heat a non-stick skillet over medium-low heat and lightly coat it with a small amount of unsalted butter.
