Ingredients

  • 2 sheets Frozen puff pastry sheets
  • 300 grams Fresh spinach leaves
  • 150 grams Low sodium feta cheese
  • 100 grams Ricotta cheese
  • 1 Large egg
  • 2 tablespoons Chives, finely chopped
  • 1 tablespoon Extra virgin olive oil
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 1 set Egg wash (1 egg + 1 tbsp water)
  • 1 tablespoon Sesame seeds

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

Thaw the puff pastry sheets according to the package instructions.

Step 3

In a large pan, heat olive oil over medium heat. Add the spinach and sauté until wilted, about 3-4 minutes. Remove from heat and let cool slightly.

Step 4

In a mixing bowl, combine the low sodium feta cheese, ricotta cheese, chopped chives, beaten egg, black pepper, and garlic powder.

Step 5

Once the spinach is cool, chop it finely and mix it into the cheese mixture until well combined.

Step 6

Roll out each sheet of puff pastry on a lightly floured surface to smooth them out if needed.

Step 7

Cut each sheet into four equal squares.

Step 8

Place a spoonful of the spinach and cheese filling in the center of each square.

Step 9

Fold each square into a triangle, pinching the edges to seal tightly. You can use a fork to crimp the edges for a better seal.

Step 10

Arrange the bourekas on the prepared baking sheet.

Step 11

Brush the tops lightly with egg wash and sprinkle with sesame seeds.

Step 12

Bake in the preheated oven for 20-25 minutes, or until the bourekas are golden brown and puffed.

Step 13

Remove from oven and let cool slightly before serving. Enjoy warm or at room temperature.
