Ingredients

  • 1 cup Rice Flour
  • 0.5 cup Tapioca Starch
  • 0.25 cup Cornstarch
  • 2.5 cups Water
  • 2 tablespoons Vegetable Oil
  • 0.25 cup Scallions (finely chopped)
  • 2 tablespoons Low-Sodium Soy Sauce
  • 1 teaspoon Sesame Oil
  • 0.25 teaspoon White Pepper

Directions

Step 1

In a large mixing bowl, combine rice flour, tapioca starch, and cornstarch.

Step 2

Gradually add 2.5 cups of water to the dry ingredients, whisking continuously to form a smooth, lump-free batter.

Step 3

Stir in 2 tablespoons of vegetable oil to the batter and set aside.

Step 4

Prepare a steaming setup: fill a large wok or pot with water and bring to a boil with a steaming rack placed inside.

Step 5

Lightly grease a flat, heatproof tray or shallow plate that fits into your steaming setup.

Step 6

Pour a thin layer (about 1/4 cup) of batter into the prepared tray, tilting to cover evenly.

Step 7

Sprinkle a few scallions over the batter, if desired.

Step 8

Carefully place the tray onto the steaming rack, then cover and steam for 4-5 minutes or until the noodle sheet is set and slightly translucent.

Step 9

Remove the tray and let it cool slightly. Using a spatula, gently lift one end of the sheet and roll it up to form a noodle roll.

Step 10

Transfer the roll to a plate and repeat the steaming process with the remaining batter.

Step 11

In a small saucepan, combine low-sodium soy sauce, sesame oil, and white pepper. Heat gently to mix the flavors, but do not boil.

Step 12

Drizzle the warm sauce over the rice noodle rolls just before serving.

Step 13

Garnish with extra chopped scallions if desired, and serve warm.
