Ingredients

  • 4 cups cooked jasmine rice (preferably day-old)
  • 1 cup low sodium chicken breast, diced
  • 2 large egg, beaten
  • 1 cup carrots, diced
  • 1 cup peas
  • 0.5 cup green onions, sliced
  • 2 tablespoons low sodium soy sauce
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 tablespoon sesame oil
  • 0.25 teaspoon ground white pepper (optional for heat)
  • 2 tablespoons neutral cooking oil (such as canola or vegetable oil)

Directions

Step 1

Prepare all ingredients by dicing the chicken into small cubes, beating the eggs, and chopping the carrots and green onions.

Step 2

In a large non-stick skillet or wok, heat 1 tablespoon of the neutral cooking oil over medium-high heat.

Step 3

Add the beaten eggs and scramble them until they are just set. Remove the eggs from the skillet and set aside.

Step 4

In the same skillet, add the remaining tablespoon of oil. Add the garlic and ginger, and sauté for about 30 seconds until fragrant.

Step 5

Add the diced chicken and cook until fully cooked through and no longer pink, about 4-5 minutes.

Step 6

Stir in the carrots and peas, and continue to cook for another 3 minutes until the vegetables begin to soften.

Step 7

Add the cooked rice to the skillet, breaking up any clumps with a spatula. Stir to mix everything evenly.

Step 8

Drizzle the low sodium soy sauce and sesame oil over the rice. Add the scrambled eggs back into the skillet and mix all ingredients together thoroughly.

Step 9

Add the ground white pepper, if using, and adjust for seasoning if necessary. Stir in the green onions just before serving.

Step 10

Serve hot as a main dish or as a side. Enjoy your low sodium Chao Fan!
