Ingredients

  • 2 cups rice flour
  • 1 cup gram flour (besan)
  • 1 teaspoon carom seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon red chili powder
  • 1 pinch asafoetida (hing)
  • 2 tablespoons unsalted butter, melted
  • 1 cup warm water
  • 1 tablespoon white sesame seeds
  • 2 cups vegetable oil (for frying)

Directions

Step 1

In a large mixing bowl, combine rice flour, gram flour, carom seeds, cumin seeds, red chili powder, and a pinch of asafoetida.

Step 2

Add the melted unsalted butter to the dry ingredients and mix until the mixture resembles breadcrumbs.

Step 3

Gradually pour warm water into the mixture, kneading to form a smooth dough. The dough should be soft, but not sticky.

Step 4

Add the white sesame seeds to the dough and knead it gently to distribute evenly.

Step 5

Cover the dough with a damp cloth and let it rest for 10 minutes.

Step 6

Meanwhile, heat vegetable oil in a deep frying pan over medium heat.

Step 7

Divide the dough into four equal portions. Take one portion and shape it into a log.

Step 8

Using a chakri maker, fill it with the dough log and press out spiral shapes onto small squares of parchment paper or directly into the oil, being careful not to burn yourself.

Step 9

Gently slide the chakri off the paper (if using) into the hot oil.

Step 10

Fry the chakri until they turn golden brown and crispy, flipping occasionally, about 2-3 minutes per side.

Step 11

Remove the chakri using a slotted spoon and drain on paper towels.

Step 12

Repeat the process with the remaining dough.

Step 13

Store in an airtight container once completely cooled to maintain their crispiness.
