Ingredients

  • 2 cups Rice flour
  • 1 cup Besan (Gram flour)
  • 2 tablespoons Sesame seeds
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Red chili powder
  • 0.5 teaspoon Turmeric powder
  • 0.25 teaspoon Hing (Asafoetida)
  • 0.5 teaspoon Low-sodium baking soda
  • 3 tablespoons Olive oil
  • 1 cup Water
  • 0 as needed Oil for frying

Directions

Step 1

In a large mixing bowl, combine rice flour, besan, sesame seeds, cumin seeds, red chili powder, turmeric powder, hing, and low-sodium baking soda.

Step 2

Heat 3 tablespoons of olive oil in a small pan until warm. Pour this warm oil into the flour mixture and mix well until it resembles a crumbly texture.

Step 3

Gradually add water to the mixture while forming a soft but firm dough. Do not add all the water at once; use just enough to knead a pliable dough.

Step 4

Fill a chakli maker or a piping bag fitted with a star nozzle with a portion of the dough.

Step 5

On a butter paper or a flat surface, form circular spirals of dough by pressing the dough through the chakli maker in a round shape.

Step 6

Heat oil in a deep frying pan over medium heat.

Step 7

Once the oil is hot, gently slide in the chakli spirals. Fry in batches to avoid overcrowding the pan.

Step 8

Fry chaklis until they turn golden brown and crispy on both sides, about 4-5 minutes per batch.

Step 9

Remove the fried chaklis using a slotted spoon and drain excess oil on paper towels.

Step 10

Allow chaklis to cool completely before storing them in an airtight container.
