  • 0.5 cup Mozzarella cheese, shredded

  • 0.5 teaspoon Dried oregano
  • 0.5 teaspoon Dried basil
  • 0.25 teaspoon Black pepper
  • 0.5 cup Low sodium tomato sauce
  • 1 medium Tomato, thinly sliced
  • 0.75 cup Low sodium mozzarella cheese, shredded
  • 0.25 cup Fresh basil leaves

Directions

Step 1

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2

Remove the leaves and core from the cauliflower. Cut it into florets, then run them through a food processor until it resembles rice. Measure out 2 cups of this cauliflower rice.

Microwave the cauliflower rice in a microwave-safe bowl, uncovered, for 5-7 minutes until soft. Let it cool slightly.

Place the cooked cauliflower rice in a clean kitchen towel, and wring out as much moisture as possible. The drier it is, the better the crust will be.
