Ingredients

  • 800 grams Carrots, peeled and sliced
  • 2 tablespoons Olive oil
  • 1 medium Onion, chopped
  • 2 Garlic cloves, minced
  • 1 tablespoon Ground coriander
  • 1 liter Low sodium vegetable broth
  • 0.5 cup Fresh coriander leaves, chopped
  • 0.25 teaspoon Black pepper, freshly ground
  • 500 milliliters Water

Directions

Step 1

Heat the olive oil in a large saucepan over medium heat.

Add the chopped onion and garlic, and sauté for 5 minutes or until the onion is translucent.

Stir in the ground coriander, and cook for an additional 1 minute to release its aroma.

Add the sliced carrots to the pan and stir well to coat them with the onion and spice mixture.

Pour in the low sodium vegetable broth and water, then bring to a boil.
