Ingredients

  • 4 large russet potatoes
  • 3 tablespoons olive oil
  • 3 tablespoons low sodium taco seasoning
  • 1 pound flank steak
  • 2 tablespoons lime juice
  • 2 tablespoons fresh cilantro
  • 1 teaspoon garlic powder
  • 0.5 teaspoon ground black pepper
  • 1 avocado, diced
  • 1 cup pico de gallo
  • 1 cup shredded cheddar cheese
  • 0.5 cup light sour cream
  • 2 green onions, sliced

Directions

Step 1

Preheat the oven to 425°F (220°C).

Step 2

Wash and slice the russet potatoes into thin fries. Pat them dry with a paper towel.

Step 3

Toss the fries with 2 tablespoons of olive oil and 2 tablespoons of low sodium taco seasoning. Spread them out in a single layer on a baking sheet.

Step 4

Bake the fries in the preheated oven for 30-35 minutes, flipping them halfway through until they are crispy and golden brown.

Step 5

While the fries are baking, prepare the carne asada. In a large bowl, combine the flank steak with lime juice, 1 tablespoon of olive oil, fresh cilantro, garlic powder, black pepper, and 1 tablespoon of low sodium taco seasoning.

Step 6

Heat a grill pan or skillet over medium-high heat and cook the marinated steak for 4-5 minutes per side for medium-rare, or until desired doneness. Remove from heat and let it rest for a few minutes.

Step 7

Slice the rested steak into thin strips.

Step 8

Once the fries are done, remove them from the oven and sprinkle shredded cheddar cheese on top. Return to the oven for an additional 2-3 minutes or until the cheese is melted.

Step 9

Top the cheesy fries with sliced carne asada, diced avocado, pico de gallo, light sour cream, and sliced green onions.

Step 10

Serve immediately and enjoy your delicious low sodium carne asada fries!
