Ingredients

  • 1 cup Long-grain white rice
  • 1 cup Coconut milk
  • 1 cup Water
  • 1 cup Fresh pineapple chunks
  • 0.5 cup Red bell pepper, diced
  • 2 tablespoons Scallions, finely chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Ground allspice
  • 0.5 teaspoon Ground ginger
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Chopped fresh cilantro
  • 1 Lime, cut into wedges

Directions

Step 1

Rinse the rice under cold water until the water runs clear. This removes excess starch and helps achieve fluffier rice.

Step 2

In a medium saucepan, combine the coconut milk and water and bring to a simmer over medium heat.

Step 3

Add the rinsed rice to the simmering liquid, stir, and reduce the heat to low. Cover the saucepan and cook for 15 minutes.

Step 4

Meanwhile, heat the olive oil over medium heat in a large skillet. Add the red bell pepper and sauté for 3-4 minutes until it starts to soften.

Step 5

Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant.

Step 6

Stir in the pineapple chunks, ground allspice, ground ginger, and black pepper. Cook for 5-6 minutes, allowing the pineapple to become slightly caramelized.

Step 7

Check the rice to ensure it's cooked; all the liquid should be absorbed. If necessary, let it steam, covered, for an additional 5 minutes.

Step 8

Fluff the rice with a fork, and then gently fold in the pineapple mixture and chopped scallions.

Step 9

Transfer the rice to a serving dish and garnish with chopped fresh cilantro.

Step 10

Serve the Caribbean Pineapple Rice with lime wedges for squeezing over the rice before enjoying.
