Ingredients

  • 4 large yellow onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 cup brown sugar
  • 1 cup apple cider vinegar
  • 2 tablespoons balsamic vinegar
  • 0.5 cup dark raisins
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon ground allspice
  • 0.5 teaspoon smoked paprika

Directions

Step 1

Heat olive oil in a large heavy-based pan over medium heat.

Step 2

Add the sliced onions to the pan and toss to coat them in the oil.

Cook the onions slowly, stirring occasionally, for about 20 minutes until they are lightly browned and caramelised.

Sprinkle the brown sugar over the caramelised onions and stir until the sugar melts completely.

Add apple cider vinegar, balsamic vinegar, and raisins to the pan. Stir to combine.
