Ingredients

  • 550 grams Butter beans
  • 1 tablespoon Olive oil
  • 1 medium Onion, finely chopped
  • 3 Garlic cloves, minced
  • 400 grams Diced tomatoes, no salt added
  • 2 tablespoons Tomato paste, no salt added
  • 1 cup Water
  • 1 medium Red bell pepper, finely chopped
  • 1 Bay leaf
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried thyme
  • 0.5 teaspoon Crushed red pepper flakes (optional)
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Rinse the butter beans thoroughly under cold water and set aside. If using dried beans, soak them overnight and cook according to package instructions before proceeding with the recipe.

Step 2

Heat the olive oil in a large saucepan over medium heat.

Step 3

Add the chopped onion and sauté for about 5 minutes, or until the onion becomes translucent.

Step 4

Stir in the minced garlic and continue to sauté for another minute until fragrant.

Step 5

Add the diced tomatoes, tomato paste, and water, mixing everything in the pot until the tomato paste is evenly dispersed.

Step 6

Add the chopped red bell pepper, bay leaf, oregano, thyme, and crushed red pepper flakes (if using). Stir to combine.

Step 7

Bring the mixture to a gentle simmer, then add the butter beans and ground black pepper.

Step 8

Cover the saucepan with a lid and let the mixture simmer for about 30 minutes, stirring occasionally to prevent sticking.

Step 9

Once the sauce has thickened and the beans are infused with the flavors, remove the bay leaf and discard it.

Step 10

Taste and adjust the seasoning if necessary, though additional salt should be avoided to keep the sodium content low.

Step 11

Serve hot, garnished with freshly chopped parsley. This dish is excellent on its own or served with a side of crusty bread.
