Ingredients

  • 12 sheets Phyllo dough
  • 1 cup Ricotta cheese (low sodium)
  • 0.5 cup Feta cheese (low sodium)
  • 0.5 cup Cottage cheese (low sodium)
  • 2 large Eggs, beaten
  • 2 tablespoons Parsley, finely chopped
  • 0.5 cup Olive oil
  • 0.25 cup Unsalted butter, melted
  • 0.25 teaspoon Ground black pepper

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a large mixing bowl, combine low sodium ricotta cheese, low sodium feta cheese, low sodium cottage cheese, beaten eggs, finely chopped parsley, and ground black pepper. Mix well until the ingredients are fully incorporated.

Step 3

Lay out one sheet of phyllo dough on a clean and dry surface. Brush it lightly with a mixture of olive oil and melted unsalted butter. Place another phyllo sheet on top and brush it lightly with the mixture as well.

Step 4

Spread about 2-3 tablespoons of the cheese mixture in a line along one edge of the phyllo sheets.

Step 5

Carefully roll the phyllo dough into a log, encasing the cheese filling. Shape the rolled phyllo into a circular coil, starting from one end and wrapping it round itself.

Step 6

Continue this process with the remaining phyllo sheets and cheese filling, adding additional coils to the pie as necessary to fill the pan, beginning from the center to the outer edges.

Step 7

Place the completed coil or spirals on a baking sheet lined with parchment paper.

Step 8

Brush the tops lightly with more of the olive oil and butter mixture to ensure a golden crust.

Step 9

Bake in the preheated oven for about 35-40 minutes, or until the burek is golden brown and crispy.

Step 10

Remove from the oven and allow to cool slightly before serving. Enjoy warm as a savory snack or as part of a meal.
