Ingredients

  • 1 loaf Baguette or crusty bread
  • 250 grams Cherry tomatoes
  • 125 grams Fresh mozzarella cheese
  • 10 large leaves Fresh basil leaves
  • 2 cloves Garlic
  • 2 tablespoons Extra virgin olive oil
  • 1 tablespoon Balsamic vinegar
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Slice the baguette into 1/2 inch thick slices. You should get about 12 slices.

Step 3

Place the slices on a baking sheet and lightly brush each slice with 1 tablespoon of olive oil.

Step 4

Toast the bread slices in the oven for about 5-8 minutes or until they are golden brown. Remove and set aside to cool slightly.

While the bread is toasting, dice the cherry tomatoes into small pieces and place them in a bowl.

Chop the fresh basil leaves finely and add them to the bowl with the tomatoes.
