Ingredients

  • 1 cup Tapioca starch
  • 1 cup Water
  • 3 tablespoons Brown sugar
  • 1 tablespoon Honey
  • 2 units Black tea bags
  • 2 cups Hot water
  • 0.5 cup Brown sugar
  • 1 tablespoon Honey

Directions

Step 1

Start by making the boba pearls. In a saucepan, bring 1 cup of water to a boil. Add 3 tablespoons of brown sugar and 1 tablespoon of honey, stirring until both are dissolved.

Step 2

Reduce the heat to low, and gradually add 1 cup of tapioca starch, stirring continuously until a dough starts to form.

Step 3

Transfer the dough to a flat surface dusted with tapioca starch and knead it until smooth. The dough should be pliable and not sticky.

Step 4

Roll the dough into thin logs, about 1 cm in diameter, and cut into small pieces. Roll each piece into a ball between your palms.

Step 5

Bring a large pot of water to a boil, and add the boba balls. Stir to prevent sticking. Cook for 15 minutes then remove from heat and cover the pot, letting the boba steep for an additional 15 minutes.

Step 6

Rinse and drain the cooked boba in cold water, then set aside.

Step 7

To make the brown sugar syrup, in a saucepan mix 0.5 cup of brown sugar and 1 tablespoon of honey with 0.5 cup of water. Bring to a gentle simmer and cook until thickened, about 5 minutes. Add the cooked boba to the syrup, stirring to coat.

Step 8

For the bubble tea, brew 2 black tea bags in 2 cups of hot water for 5 minutes. Remove the bags and let the tea cool.

Step 9

Fill two glasses with equal portions of boba and syrup, then add tea. Stir well and add ice or milk if desired.

Step 10

Serve immediately with wide straws and enjoy your low sodium brown sugar boba tea!
