Ingredients

  • 4 pieces boneless, skinless chicken breast
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 4 cloves garlic
  • 2 teaspoons fresh rosemary leaves
  • 2 teaspoons fresh thyme leaves
  • 0.5 teaspoon ground black pepper
  • 1 teaspoon onion powder
  • 2 large bell pepper
  • 16 whole cherry tomatoes
  • 2 medium zucchini
  • 8 pieces bamboo skewers

Directions

Step 1

Soak the bamboo skewers in water for at least 30 minutes to prevent burning while grilling.

Step 2

In a small bowl, mix olive oil, lemon juice, minced garlic, fresh rosemary, thyme, ground black pepper, and onion powder. This will be your marinade.

Step 3

Cut the chicken breasts into bite-sized pieces and place them in a shallow dish.

Step 4

Pour the marinade over the chicken pieces, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Step 5

While the chicken is marinating, cut the bell peppers into 1-inch squares and slice the zucchini into thick rounds.

Step 6

Preheat the grill to medium-high heat.

Step 7

Thread the marinated chicken, bell pepper squares, cherry tomatoes, and zucchini rounds alternately onto the soaked bamboo skewers, leaving a little space between each piece for even cooking.

Step 8

Place the brochettes on the grill and cook for about 12-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

Step 9

Remove from grill and serve hot. Enjoy your flavorful and healthy low sodium Brochette Poulet!
