Ingredients

  • 8 pieces Chicken drumsticks
  • 1 cup Plain breadcrumbs (unsalted)
  • 0.5 cup All-purpose flour
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Dried oregano
  • 0.5 teaspoon Dried thyme
  • 2 large Eggs
  • 0.25 cup Low-sodium chicken broth
  • 0 Olive oil cooking spray

Directions

Step 1

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it using olive oil cooking spray.

Step 2

In a shallow bowl, mix together the breadcrumbs, garlic powder, paprika, black pepper, onion powder, oregano, and thyme.

Step 3

In a separate shallow bowl, place the all-purpose flour.

Step 4

In a third shallow bowl, whisk together the eggs with the low-sodium chicken broth until well combined.

Step 5

Pat the chicken drumsticks dry with paper towels. Dredge each drumstick in the flour, shaking off any excess.

Step 6

Dip the floured drumstick into the egg mixture, allowing any excess to drip off.

Step 7

Coat the drumstick in the breadcrumb mixture, pressing down slightly to ensure the breadcrumbs adhere well. Repeat with remaining drumsticks.

Step 8

Place the coated drumsticks onto the prepared baking sheet. Lightly spray the drumsticks with olive oil cooking spray for a golden and crispy finish.

Step 9

Bake in the preheated oven for 40-45 minutes, turning halfway through, until the chicken is cooked through and the coating is crisp and golden brown. A meat thermometer should read at least 165°F (74°C) when inserted into the thickest part of the drumstick.

Step 10

Serve hot with your choice of low-sodium dipping sauce or side salad.
