Ingredients

  • 4 large Russet potatoes
  • 3 tablespoons Olive oil
  • 1 tablespoon Unsalted butter
  • 1 medium Onion
  • 2 cloves Garlic
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Paprika
  • 2 tablespoons Fresh parsley

Directions

Step 1

Wash and peel the russet potatoes. Slice them into thin, even slices about 1/8 inch thick.

Step 2

Fill a large pot with water and bring it to a boil. Add the potato slices and parboil for about 5 minutes until slightly tender but not fully cooked. Drain the potatoes and allow them to cool.

Step 3

Peel and finely slice the onion. Mince the garlic cloves.

Step 4

In a large frying pan or skillet, heat the olive oil and unsalted butter over medium-high heat.

Step 5

Add the sliced onion to the pan and sauté for 3-4 minutes until translucent and fragrant.

Step 6

Add the cooled potato slices to the pan in a single layer. Increase the heat to high and cook for 5-7 minutes without stirring to form a crispy golden crust on one side.

Step 7

Reduce the heat to medium, gently turn the potatoes, and add the minced garlic to the pan. Fry for an additional 5 minutes or until the potatoes are golden and crispy all over.

Step 8

Sprinkle the potatoes with ground black pepper and paprika, adjusting the seasoning to taste, if necessary.

Step 9

Chop the fresh parsley and sprinkle it over the potatoes before serving.

Step 10

Serve hot as a side dish or enjoy on its own as a delicious low-sodium snack.
