Ingredients

  • 2 pounds chicken wings
  • 2 tablespoons olive oil
  • 4 garlic cloves
  • 1 medium onion
  • 1 large carrot
  • 1 celery stalk
  • 2 cups low sodium chicken stock
  • 2 tablespoons lemon juice
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 0.25 cup fresh parsley

Directions

Step 1

Rinse the chicken wings under cold water and pat them dry with paper towels.

Step 2

Peel and mince the garlic cloves. Peel and dice the onion. Peel and slice the carrot into rounds. Chop the celery stalk.

Step 3

In a large pot or Dutch oven, heat the olive oil over medium-high heat.

Step 4

Add the chicken wings to the pot and brown them on all sides, about 7-10 minutes. Work in batches if necessary to avoid overcrowding the pot.

Step 5

Remove the chicken wings and set aside on a plate.

Step 6

In the same pot, add the minced garlic, onion, carrot, and celery. Sauté for about 5 minutes until the vegetables are softened.

Step 7

Return the chicken wings to the pot. Add the low sodium chicken stock, lemon juice, black pepper, thyme, and bay leaf. Stir to combine.

Step 8

Bring the mixture to a gentle simmer. Cover the pot with a lid, reduce heat to low, and let it braise for about 1 hour, stirring occasionally.

Step 9

Check if the chicken is cooked thoroughly by ensuring it reaches an internal temperature of 165°F (74°C).

Step 10

Once cooked, remove from heat. Discard the bay leaf.

Step 11

Serve the braised chicken wings garnished with freshly chopped parsley.
