  • 2 medium Tomato
  • 1 inch piece Ginger
  • 3 whole Garlic cloves
  • 1 whole Green chili
  • 0.5 teaspoon Mustard seeds
  • 0.5 teaspoon Cumin seeds
  • 0.5 teaspoon Turmeric powder
  • 0.5 teaspoon Red chili powder
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Garam masala
  • 1 cup Low-sodium vegetable broth
  • 2 tablespoons Fresh cilantro leaves
  • 2 tablespoons Olive oil
  • 0.25 teaspoon Fenugreek seeds

Directions

Step 1

Peel the bottle gourd and cut it into small cubes.

Step 2

Chop the onion and tomatoes finely. Grate the ginger and mince the garlic cloves.

Step 3

Heat olive oil in a pan over medium heat. Add mustard seeds, cumin seeds, and fenugreek seeds. Let them splutter for a few seconds.
