Ingredients

  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 0.5 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 0.5 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 cups fresh blueberries
  • 0.25 cup honey
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Directions

Step 1

Preheat the oven to 350°F (175°C).

Step 2

Line an 8x8-inch baking dish with parchment paper, leaving an overhang on two sides for easy removal.

Step 3

In a large bowl, combine rolled oats, all-purpose flour, brown sugar, baking powder, and ground cinnamon. Stir to mix well.

Step 4

Add the melted unsalted butter and vanilla extract to the dry ingredients. Mix until the mixture resembles coarse crumbs.

Step 5

Press half of the oat mixture firmly into the bottom of the prepared baking dish to form a crust.

Step 6

In a medium bowl, combine the fresh blueberries, honey, lemon juice, and cornstarch. Toss gently until blueberries are coated.

Step 7

Spread the blueberry mixture evenly over the crust in the baking dish.

Step 8

Sprinkle the remaining oat mixture evenly over the top of the blueberries.

Step 9

Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the blueberries are bubbly.

Step 10

Allow the bars to cool completely in the baking dish before using the parchment paper to lift them out.

Step 11

Cut into squares and serve. Store any leftovers in an airtight container in the refrigerator.
