Ingredients

  • 1 sheet Low sodium puff pastry sheet
  • 2 tablespoons Unsalted butter
  • 150 grams Cremini mushrooms
  • 2 cloves Garlic (minced)
  • 1 teaspoon Fresh thyme leaves
  • 0.25 teaspoon Black pepper
  • 1 small Shallot
  • 1 large Egg
  • 30 grams Low sodium cheese

Directions

Step 1

Preheat your oven to 200°C (392°F) and line a baking sheet with parchment paper.

Step 2

In a skillet, melt the unsalted butter over medium heat. Add the minced shallot and garlic, and sauté until fragrant and translucent, about 2-3 minutes.

Step 3

Add the cremini mushrooms to the skillet and cook until they release their moisture and become golden brown, about 5-7 minutes.

Step 4

Stir in fresh thyme leaves and black pepper. Remove the skillet from heat and set aside to cool slightly.

Step 5

Roll out the low sodium puff pastry sheet on a lightly floured surface to an approximate 30x30 cm (12x12 inches).

Step 6

Cut the pastry into 12 equal squares.

Step 7

Spoon a small amount of the mushroom mixture into the center of each puff pastry square, then sprinkle with low sodium cheese.

Step 8

In a small bowl, beat the egg with a splash of water to create an egg wash.

Step 9

Brush the edges of each pastry square with the egg wash, then fold each square into a triangle or rectangle, pressing the edges gently to seal.

Step 10

Transfer the filled pastries to the prepared baking sheet.

Step 11

Brush the tops of the pastries with more egg wash for a glossy finish.

Step 12

Bake in the preheated oven for 12-15 minutes, or until the puff pastry is golden brown and flaky.

Step 13

Allow to cool slightly before serving. Serve warm or at room temperature.
