Ingredients

  • 500 grams beef sirloin, sliced into strips
  • 250 grams cremini mushrooms, sliced
  • 2 tablespoons olive oil
  • 3 units garlic cloves, minced
  • 1 unit onion, thinly sliced
  • 250 milliliters low sodium beef broth
  • 120 milliliters white wine
  • 0.5 teaspoon black pepper, freshly ground
  • 1 teaspoon paprika
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Directions

Step 1

Heat 1 tablespoon of olive oil in a large pan over medium heat.

Step 2

Add the garlic and onion, and sauté until the onion becomes translucent, about 5 minutes.

Step 3

Increase the heat to medium-high and add the beef strips to the pan. Sear until browned on all sides but not fully cooked through, about 4-5 minutes. Remove beef from the pan and set aside.

Step 4

In the same pan, add the remaining tablespoon of olive oil and the sliced mushrooms. Cook until the mushrooms are tender and golden brown, about 5 minutes.

Step 5

Stir in the paprika, and black pepper, and then pour in the white wine. Let it simmer until the wine reduces by half, about 3 minutes.

Add the low sodium beef broth to the pan and return the beef to the pan as well.

Mix the cornstarch with water to create a slurry and add it to the pan. Stir well to combine and thicken the sauce.

Step 8

Lower the heat to a gentle simmer and cook until the beef is cooked through and the sauce has thickened, about 10-15 minutes.

Step 9

Garnish with fresh parsley and serve warm over your choice of side, such as rice or boiled potatoes.
