Ingredients

  • 1 cup Basmati rice
  • 0.5 cup Moong dal (split yellow lentils)
  • 3 cups Water
  • 2 tablespoons Olive oil
  • 1 medium Onion, finely chopped
  • 1 tablespoon Ginger garlic paste
  • 1 medium Tomato, finely chopped
  • 2 whole Green chilies, slit
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 0.25 teaspoon Black pepper powder
  • 1 small Carrot, diced
  • 0.5 cup Green peas
  • 1 cup Spinach, chopped
  • 0.25 cup Cilantro, chopped
  • 1 tablespoon Lemon juice

Directions

Step 1

Rinse the basmati rice and moong dal under cold water until the water runs clear. Drain and set aside.

Step 2

Heat olive oil in a large heavy-bottomed pan over medium heat. Add cumin seeds and let them sizzle for a few seconds until aromatic.

Step 3

Add the finely chopped onion and sauté until translucent, about 5 minutes.

Step 4

Stir in the ginger garlic paste and cook for another minute until the raw smell disappears.

Add the chopped tomato and green chilies, and cook until the tomato softens and the oil begins to separate, around 3-4 minutes.

Mix in turmeric powder, coriander powder, and black pepper powder. Sauté for 1-2 minutes.
