Ingredients

  • 200 grams Chickpea flour (Besan)
  • 2 medium Potatoes
  • 1 medium Onion
  • 1 medium Green chili
  • 1 inch piece Ginger
  • 3 Garlic cloves
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Cumin powder
  • 0.5 teaspoon Red chili powder
  • 0.25 teaspoon Baking soda
  • 2 tablespoons Fresh coriander leaves
  • 100 ml Water
  • 500 ml Oil for deep frying

Directions

Step 1

Peel the potatoes and slice them into thin round discs. Place them in cold water to prevent browning.

Step 2

Finely slice the onion, green chili, and chop the ginger and garlic.

Step 3

In a large mixing bowl, combine chickpea flour, turmeric powder, coriander powder, cumin powder, red chili powder, and baking soda.

Step 4

Add the chopped onion, green chili, ginger, garlic, and finely chopped coriander leaves to the flour mixture.

Step 5

Gradually add water while stirring to form a thick batter. The batter should coat the potatoes but not be too runny.

Step 6

Drain the potato slices and pat them dry with a paper towel. Add them to the batter and mix until well coated.

Step 7

Heat the oil in a deep pan over medium-high heat until it reaches 350°F (175°C).

Step 8

Carefully drop spoonfuls of the batter-coated potato slices into the hot oil, frying a few at a time.

Step 9

Fry the bhajias until golden brown and crisp, about 4-5 minutes per batch, ensuring an even cooking by turning occasionally.

Step 10

Remove the bhajias with a slotted spoon and drain them on a plate lined with paper towels.

Step 11

Serve the bhajias hot, garnished with additional fresh coriander if desired, and enjoy them with your favorite chutney or sauce.
